Remember...Im NOT a natural cook, so all these are EASY & HEALTHY!




Corn, Mango & Edamame Salad:

2 cups frozen shelled edamame
1 1/2 cups fresh corn kernels(from 2 large ears)
1 1/2 cups mango cubes (about 1 Mango)
1 cup chopped tomato
1/2 cup chopped red onion
2 tablesp chopped cilantro
1 tablesp extra virgin olive oil
1 tablesp freshly squeezed lime juice
3/4 tsp salt
1/4 tsp freshly ground black pepper

Prepare edamame according to package.  Transfer all ingredients to large bowl.  Toss well.
Eat and Enjoy!

Classic Oatmeal:

1 cup fat free milk
1 cup old fashioned oats
2 tablesp walnuts, chopped

heat milk in medium saucepan until almost boiling.  Add oats at a simmer, stirring until creamy, 1-2 min.  Sprinkle with walnuts and EAT!

Spinich Salad with Almond Encrusted Chicken Breast:


5oz Boneless, skinless chicken breast
1 tablesp cornstarch
1/4 cup liquid egg substitute
1 tablesp finely chopped almonds
2 tablesp balsamic vinegar
1 tablesp olive oil
1/8 tsp freshly ground black pepper
3 cups baby spinich leaves
1/4 cup sliced mushrooms
1/4 cup yellow grape tomatoes, halved
1 small red bell pepper, sliced into strips

Dust each side of chicken breast with cornstarch.  Dip breast into egg substitute to coat then sprinkle on almonds
Coat skillet with cooking spray and place over medium heat.  Saute chicken 5 min on each side or until cooked through.
Whisk vinegar, oil and black pepper in bowl.  Add spinich and toss.  Top with mushrooms, tomatoes, bell pepper and sliced chicken.

EAT! Enjoy!!
